granny's sausage balls

A family favorite is sausage balls. But the original recipe called for so much biscuit mix that the end result was too "doughy" for us, so here is what I've come up with as perfect for our family. I've put this in the appetizer catagory, but we eat them with scrambled eggs or an omlet as a main dish, too.

Ingredients For granny's sausage balls

  • 2 lb
    of your favorite sausage (I've found that Williams sausage is really good for this)
  • 1
    6 oz. package Bisquick or your favorite biscuit mix (I've found they are all about the same)
  • 1 - 1 1/2
    cups shredded cheddar cheese (mild or sharp - this is almost a whole 8 oz. package)

How To Make granny's sausage balls

    Preheat oven to 375 degrees. Line baking sheet with parchment paper. Let sausage come to almost room temperature (it's easier to mix.) In large mixing bowl, mix sausage and cheese with your hands. Add baking mix and mix well with your hands, until all baking mix is mixed in. Place sausage balls on parchment paper and bake about 20-25 minutes, turning half way into baking. Drain on paper towel lined dish. This makes about 50 sausage balls. You can cook the amount you want and freeze uncooked sausage balls for later. If you find you want more biscuit mix, by all means add it but I mix it until mixture is not so sticky in my hands, that's how I know it's just right. (You can easily make half the recipe.)
