This recipe is My version of Pig in a Blanket. I use this recipe for Years for Tailgaiting, and as a Appetizer. The Kids can't get enough. You can do it in the oven or outside on the Grill. If You use the outside grill, cover the grill with Foil where there is not much coals and spray the foil with cooking spray. You don't want to burn Your sausage before Your cheese is melted. I promise You, they will come back for more and more!!!

Ingredients For blanket over the pig. (my version of pig in a blanket)

  • 1 pkg
    ( 8 ) vienna's or any cooked sausage to taste
  • 1 1/2 lb
    red potatoes, peeled and cut in quarters
  • 4
    fat cloves of garlic unpealed
  • 1 stick
    unsalted butter halved
  • 1/3 c
    heavy cream
  • 1 lg
    onion chopped
  • 1/2 c
    chopped parsley
  • 2 c
    grated cheddar cheese
  • spicy brown mustard
  • salt and pepper to taste

How To Make blanket over the pig. (my version of pig in a blanket)

    Preheat oven to 400F Place the garlic on a baking tray and bake for 15 minutes until softened. Allow to cool n little. Then peel away the skins. Spray chopping knife with cooking spray and chop the carlic until smooth. Meanwhile cook the potatoes in lightly salted water for about 15 minutes or until tender. Set aside. Melt 1/2 stick butter in frying pan. add the onion and cook until soft and lightly brown. While the potatoes is still hot, mash it with 1/2 stick butter and cream, using a potato masher. Add the garlic and 1/2 of the chopped parsley. Season with salt and pepper.

    Slice vienna's or sausage's lengthwise but not completely through. Layered it on a lightley cooking spray baking tray. Spread mustard evenly over each vienna or sausage. Fill with mashed potatoes. Spoon onions over potatoes and cover with cheese. Transfer to oven and bake until cheese is melted an bubbly. Remove from the oven and garnish with chopped parsley. Serve warm or cold.
