Yum! We love Karen's kicked up version of the pulled chicken. All the added ingredients give the chicken a pop of flavor. The pastry sheets add a nice crunch. These make a great meal or an easy party appetizer.

Ingredients

1 Tbsp
olive oil
1x12 oz. box
Lloyds pulled chicken, chopped
1/3 c
onion, chopped
1/3 c
green bell pepper, chopped
1
jalapeno pepper, diced
3 to 4 Tbsp
Carolina BBQ Sauce by Bull's Eye
2
puff pastry sheets, thawed
1
egg, beaten
2 tsp
water

Directions Step-By-Step

In a skillet add the oil and heat over medium-low.

Preheat oven to 350.

In the skillet add all ingredients except puff pastery sheets. Cook 10 minutes.

Unfold pastry sheets and using a large biscuit cutter cut 20 circles.

Spray a cookie sheet with cooking oil. Lay 10 circles on sheet. Using a tablespoon spoon chicken mixture into circles on cookie sheet.

Roll the other 10 circles out with a rolling pin to flatten. Take the flatten circles and place on top of the chicken.

Use a fork and press around the circles to seal.

Combine egg with the water, brush on top of circles. Bake 15 to 20 minutes.

If you have any extra chicken it will be awesome on your favorite bread, or you can buy extra puff pastery sheets to make more puffs.
