Ingredients

2 pkg little smokies
1 1/2-2 lb bacon, cut in thirds (i used thick cut)
1 stick butter
2 c brown sugar
3/4 c sweet chili sauce
1/3 c peanut butter
1 Tbsp minced garlic (i used jarred refrigerator)
3 tsp curry powder
1 tsp cayenne pepper (more or less depending on spice preference)

Annette's Notes:

This little Piggy named 'smokie' and this little piggy named 'bacon' got "wrapped" in each others arms. Then, the two little piggies went swimming in a pool of butter, brown sugar, peanut butter, chili sauce, curry and cayenne pepper before laying in the heat to get nice and browned and crispy on the outside. Get the picture? NOM! NOM!

You'll be in 'Hog' heaven.

Directions

Preheat oven to 375°. Cut bacon into thirds and wrap each piece around little smokies. Place in baking dish or casserole seam side down.

In a medium sauce pan, melt butter over medium heat. Add garlic and let cook for a couple of minutes. Pour in 1 cup of brown sugar and stir until it melts and dissolves.

Add peanut butter and stir until it melts into the mixture. Next add chili sauce, curry and cayenne pepper.

Stir until mixture is well combined. Turn heat to low and allow to simmer for about 5 minutes making sure to watch it so it doesn't scorch or burn.

Pour mixture over smokies. Top with remaining 1 cup brown sugar. Bake for 25 minutes at 375°. Turn heat to 400° and bake for 5-10 more minutes. You're looking for the bacon to start becoming near the end of being crisp.

Finally, turn the broiler on to get the bacon to that final crispy stage. ONLY leave them in there for about 2 minutes. You don't want to over cook your smokies.

***This recipe makes about 80. If you are only going to make one package of smokies you may have to adjust your cooking time. I just don't know as I've only just created the recipe and tried them with a double batch. Just watch for your bacon doneness and you'll be good to go. You will be in HOG heaven. "Pun intended"

Boy does this sound yummy!! Oh my goodness! Love your little piggy storie too! LOL! I have to make these! Back to the store tomorrow! I got all the stuff for the black eyed peas of yours, forgot the potatoes though but now I have to get the stuff for this too so It will be worth the trip. YUMMMM!!

Sounds good except for the curry I just don't like it, is there anything else I could sub? or could maybe I just add 1 tsp? Don't want to mess it up

THESE LOOK ABSOLUTELY DIVINE!
We always have little smokies in some form or fashion for Christmas Eve, then again for New Years Eve, usually. I will save this recipe and try them for New Years!
