i make this recipe for parties and bbq's its always a big hit. the peppers are spicy without being overpowering and they go a long way because with the sausage on the outside they are a mouthful or two. lol. hope you all enjoy this recipe as much as my friends and family do. enjoy!

Ingredients For armadillo eggs

  • 10 or 12 md
    jalapeno peppers
  • 2
    rolls of sausage ( i like jimmy dean mild)
  • 1
    bag shredded taco blend cheese
  • 1 box
    shake and bake for pork (any flavor)

How To Make armadillo eggs

  • 1
    preheat oven to 400 degrees (SOME OVENS MAY VARY ON TEMP)
  • 2
    spray a cookie sheet with cooking spray.
  • 3
    wash and de-seed your jalapeno peppers. tip: u may want to wear rubber gloves or your hands will burn from the peppers.

    stuff the peppers with cheese, i prefer the taco blend but you can use whatever shredded cheese u prefer.

    roll each pepper in a large enough sausage patty to cover the whole thing. try not to leave any gaps or holes or your cheese may leak out.

    put shake n bake in a ziploc bag (its easier to use than the small bags provided)

    shake and bake all the peppers and place on cookie sheet
  • 8
    bake for 30-35 min(turning eggs over once during baking)or until sausage is cooked and juices run clear. enjoy, you have just made armadillo eggs!!!!
