CRANBERRY-GINGER CHUTNEY

Ingredients

1 1/2 c
cranberries
3/4 c
brown sugar, packed
1/3 c
dried apricot halves, chopped
1/3 c
golden raisins
2 Tbsp
finely chopped, peeled fresh ginger
2 Tbsp
cranberry juice
3/4 tsp
ground cardamom
1/4 tsp
cayenne pepper

Directions Step-By-Step

In a medium saucepan, combine all the above ingredients and cook over medium heat, stirring constantly, until sugar is dissolved...Cook, uncovered, for 3 to 4 minutes more or till cranberries pop, stirring occasionally.

Transfer to a bowl; let stand about 1 hour or until completely cool.

Cover and chill for up to 1 week....
