2 cups grated sharp cheddar cheese
fresh bread slices, toasted
Toss cheese with flour in a heavy medium saucepan
Heat on very low, stirring often, until cheese is melted and smooth (mixture can be prepared to this point and reheated later)
Place toasted bread slices on a small greased baking sheet
Spoon cheese mixture over toast, completely covering the surface. Broil 4 inches from heat until bubbly and lightly browned.
Broiling for too long will make cheese tough
