I got this idea from ingredients that go good in a salad and I just put them in a sandwich instead. Serve with a little Italian Dressing sprinkled with parmesan cheese on the side to dip in.

Notes from the Test Kitchen:
This grilled cheese is something you would expect at a fancy deli. The garlic mayo packs a punch of flavor and crisps the bread up beautifully. The Gouda melts wonderfully and it pairs perfectly with the salty bacon, spinach, and softened onion. Every bite is a gooey bit of flavor!

Note: Our sourdough was on the larger side, so we did add an extra slice of Gouda. You can never have too much cheese.

Ingredients

2 slice
sourdough bread
1/4 c
fresh or frozen spinach
2 slice
bacon cooked
3 slice
smoked deli sliced Gouda cheese
1 slice
onion, microwave 1 minute

GARLIC MAYO

2 Tbsp
mayonnaise
1 clove
garlic, reserving a few pieces

Directions Step-By-Step

Gather all your ingredients.

Make the Grilled Cheese Garlic Mayo Spread. Spread each slice of bread with the grilled cheese garlic mayo spread saving pieces of garlic from the spread and put then in the spinach. Set aside.

Mix garlic and spinach.

Heat spinach in microwave until warm.

Add the Gouda cheese, then spinach and then top with bacon. Make sure the grilled cheese garlic mayo spread is on the outside of the sandwich. *Note: No need for butter, you're using mayo instead.

Add one slice onion that has been heated in the microwave one minute.

Put sandwich in a preheated skillet and grill with the grilled cheese garlic mayo spread on the outside of the sandwich.

Grill until golden on each side.

Serve with some chips and enjoy!
