Ingredients

1/2 lb. chorizo sausage
1/2 lb. lean ground beef
3/4 cup white onion, chopped
1 can refried beans, 16 oz.
your favorite tortilla chips
2 cups shredded monterey jack cheese or to taste
2 cups shredded cheddar cheese or to taste
1 cup of your favorite salsa
1/4 cup green onions, thinly sliced
pickled jalapeño slices, to taste
1 can sliced black olives

Directions Step-By-Step

1
Remove casing from chorizo sausage. In large skillet, put chorizo sausage, ground beef and onion and sauté over medium heat til meat is lightly browned. Drain off grease.
2
Preheat oven to broil. Spread refried beans evenly on large ovenproof platter, about 10 x 15 inches and top with tortilla chips, forming a peak in the center of the platter. Spread meat mixture evenly over tortilla chips and then smother with shredded cheeses evenly covering as many tortilla chips as possible. Put the platter about 5 inches beneath the broiler and cook til cheese is melted and bubbly.
3
Drizzle salsa over nachos and garnish with green onions, pickled jalapeno slices and sliced black olives. Mound guacamole and sour cream on top of nachos. Serve at once. Serves 6 to 10
