My husband was never a fan of store-bought pimento cheese spread. I coerced him into trying this homemade version, and now he asks me to make it weekly. It's delicious!

Ingredients

1 c
reduced fat cheddar, grated
2 oz
greek yogurt, non-fat
2 Tbsp
mayonnaise, light
2 oz
pimentos, chopped (half the jar)
1 pinch
salt

Gently fold all ingredients together. Don't mix it to death, it will ruin the texture of the cheese!

Serve immediately. Keep leftovers refrigerated.
