Lay a sheet of Puff Pastry out on a board. Using a small (2" size) cookie cutter of a star (or heart, circle, etc.), cut out shapes. ***If you do not have a cookie cutter, you may cut out Diamond shapes with a knife.
Arrange the puff pastry cut outs on a baking sheet. Brush with a tiny bit of olive oil, and spinkle each one with a little freshly grated Parmesan and black pepper.
Bake at 400 deg. F. until puffed and crisp, about 15 minutes. remove from oven and let cool. Serve as an appetizer with a cheese platter, or great alongside a soup dinner.
