Do you buy your pimento cheese in plastic bowls from the store? You never will again if you ever try this!! TIP: A JAP member shared with me that you could add lime juice to plain yogurt and it would taste like sour cream. Well I did this when I made my second batch, and by golly, it tasted like sour cream to me! So I will be making it without sour cream in the future which will cut back some on the fat and sodium.

Ingredients For pimento cheese spread with fresh garden veggies

  • 4 c
    grated 2% cheddar cheese
  • 1/2 c
    greek yogurt-fat free
  • 1/2 c
    light sour cream
  • 1 Tbsp
    shaved fresh jalapeno
  • 1 Tbsp
    shaved onion
  • 1/2
    red bell pepper, roasted
  • 1/2 tsp
    black pepper
  • 1 dash
    tumeric
  • crumbled bacon, opt.
  • ALTERNATIVE OPTIONS:
  • smoke cheese

How To Make pimento cheese spread with fresh garden veggies

    "Shave" onion and jalapeno using a fine micro-plane, or the smallest side on your cheese grater. Use juice for onion as well.

    Roast red bell under broiler till slightly charred and tender. Chop into very small pcs.

    In a medium bowl, mix together 1/2 c of greek yogurt and 1/2 c of light sour cream. Grate 4 c. of cheddar cheese, add to mix. Add onion, jalapeno, red bell, pepper and turmeric. Mix together well. Add cooked, crumbled bacon if desired. Let sit in fridge for an hour or so. Enjoy!
