Little Reuben Appetizers

These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them.

A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

Ingredients

1 pkg
appetizer size deli rye bread
1 c
prepared thousand island salad dressing
1/2 lb
deli style corned beef, sliced thin
1 pkg
sauerkraut, from deli or canned, well drained
1/2 lb
thinly sliced swiss cheese

Step-By-Step

1Preheat oven to 350 degrees.

Separate bread slices and spread out on an ungreased cookie sheet.

2Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.

3Bake for 10 to 12 minutes or until cheese is melted and bubbly.

Serve warm from the oven.
