eggs,hard boiled , chopped( reserve 2 whole yolks)
1/4 c
thawed spinach, cooked and drained and squeezed dry, chopped
1 medium
avocado, scooped and diced
1 Tbsp
greek feta cheese
1 Tbsp
greek feta cheese with lemon,garlic and oregano
1 tsp
parmesan cheese,grated
1 Tbsp
plain greek yogurt
dash of salt and pepper to taste

Directions Step-By-Step

Chop eggs coarsely and fold in remaining ingredients.
Serve as open-faced sandwich on whole wheat bread or crackers and
grate reserved yolks over filling before serving.
