Had some time on my hands, looked into the pantry to see what I had… came up with these. All I can say is: DAMN!!!

These are crazy easy to put together, and can be customized to your particular tastes.

Hint: Since you're not using a lot of sauce, choose something with some kick in it.

So, you ready… Let’s get into the kitchen.

Ingredients

PLAN/PURCHASE

1 medium
tortillas, i prefer the flour variety, cut into 4-inch rounds
1 Tbsp
pizza sauce, choose your favorite
1/2 Tbsp
parmesan cheese, grated
1 Tbsp
mozzarella cheese, i prefer buffalo, shredded
olive oil, extra virgin for brushing

OPTIONAL INGREDIENTS

italian sausage
pepperoni
ham
beef
whatever

Step-By-Step

1PREP/PURCHASE
2Gather and prep all your ingredients.
3Chef’s Note: You will need a standard-size muffin tin, with openings of about 3 inches, and six muffins to the tin.
4Place a rack in the middle position, and preheat the oven to 400f (205c).
5Brush both sides of the tortilla with olive oil.
6Push into the muffin tin, and add the pizza sauce, and spread over the bottom and sides of the tortilla.
7Add your toppings… have fun and be generous.
8Top with the cheese (Parmesan first, then mozzarella).
9Chef’s Note: Repeat for any additional mini pizza bites.
10Place into the preheated oven, and bake for 12-14 minutes.
11Chef’s Tip: The cheese should be bubbling and beginning to brown.
12PLATE/PRESENT
13Place on a serving platter, and stand back. Enjoy.
14Keep the faith, and keep cooking.
