Combine collard greens, cabbage, green onion, garlic, ginger, red pepper flakes,pulled pork, bacon, rice noodles, soy sauce and sesame oil in a large mixing bowl. Combine well.
Build you spring roll: Lay the egg roll wrapper out like a diamond on dry surface. Place a handful of the filling in the middle of the egg roll, fold and roll. Add a little egg wash at the top and seal.
Deep fry them on medium-high. Remove them once they're golden brown all over and are floating to the top. Fry in batches. Serve with dipping sauce.
