This recipe was originally from The Pampered Chef cookbook called "Recipes from the Heart Cookbook". I have tweaked slightly. This is a lovely fresh little appetizer. I double the recipe. Time for draining tomatoes & refrigeration, not included in Prep time.

Ingredients For sharon's stuffed cherry tomatoes

24cherry tomatoes, stemmed

6bacon slices, cooked, drained, and crumbled (pork or turkey)

1/2 cfinely chopped green onion

1/2 clow-fat mayonnaise

fresh parsley for garnish
How To Make sharon's stuffed cherry tomatoes

1Place tomatoes, stem-side down, on a cutting board. Cut thin slice from the top of each tomato. Using a small spoon (a grapefruit spoon, would be good to use), scoop out the tomato middle and discard. Turn tomatoes over to drain well, on paper towels In a small bowl, combine all ingredients, except garnish; spoon into tomatoes. Cover. Then, chill about 2 hours. Garnish with parsley, just before serving, if desired.
