Fried Black Eyed Peas

- black eyed peas, drained
- seasoning salt
- canola oil
1Drain and rinse beans.
2Place on paper towels and allow to air dry on counter for at least an hour.
3When ready to cook, heat oil in dutch oven or electric fryer to 325 degrees.
4With a heat proof strainer (cooking spider) scoop up the peas and place into the hot oil. Only place two scoops in the hot oil to prevent overcrowding.
5Fry until peas are crusty; then drain on paper towels. Serve warm.
