Last night I went into the kitchen and started to cook up a simple, quick and easy meal. I chopped up 5 medium russet potatoes, chopped up 1 large onion, and 1 garden fresh tomatoe. I got the large skillet out and placed butter, extra virgin olive oil and the potatoes and tomato. My first inclination was to just cook these up and have a fried dinner.... Well, as You know me by now, a " Simple " meal and I don't exist! Lol !!! What I ended up with will be in my recipes as a very versatile " SoupSauce "... What is a " SoupSauce " You ask ??? It is anything You want it to be. Here we go!

Ingredients For fireman bob's unique and unusal tomatoe soup/sauce

  • 5 md
    russet potatoes - chopped
  • 1 lg
    yellow onion - chopped
  • 5 lg
    garden fresh tomatoes - chopped
  • 2 Tbsp
    butter
  • 4 Tbsp
    extra virgin olive oil
  • 2 Tbsp
    hungarian paprika
  • 2 Tbsp
    granulated garlic
  • 1 Tbsp
    garlic salt
  • 2 stick
    chili powder
  • 2 Tbsp
    basil - chooped fine
  • 3 or 4 dash
    hot sauce - your choice ( i use tobasco* )
  • 1 1/2 c
    water
  • 3 can
    11.5 ounce tomatoe juice ( low sodium )

    In a large skillet, heat the butter and oil then place potatoes, onion, and 1 tomato in and " fry " till softened, add paprika, granulated garlic, garlic salt, chili powder, basil, and the hot sauce. Simmer for 20 minutes, watching " liquid ", add tomatoes juice as needed.

    Add this mixture to a large Dutch Oven with the water. Add the remaining tomatoes. Bring to a boil and boil for 5 minutes, then simmer for 5 more minutes.

    When all is softened, use your immersion blender to " smooth " everything into a soup/sauce texture. Cook for 15 minutes.

    Serve with a good crusty bread or your favorite bread !

    PS...... I put the " left overs " in the fridge and this morning I took it out and had a bowl of it " COLD "... It is great cold too... You can use this as a sauce, just add cooked hamburger or use with pasta... ENJOY !!!
