I started growing cucumbers in the garden this year and needed a quick and new way to enjoy the fresh flavors. I also like to mix in some rice noodles for a different twist. It goes really well with just about anything you pack up for a picnic. It will keep in the fridge for up to two weeks.
- 2 large
- 1/3 c
- rice vinegar
- 3 tsp
- 1/2 tsp
- kosher salt
- 1 Tbsp
- hoisin sauce
- 1 1/2 tsp
- fresh ginger - minced
- 1/3 c
- pickled ginger - cut in thin strips
- 1/2 c
- chopped peanuts - for garnish
1Cut cucumbers in half lengthwise and scoop out seeds. Cut crosswise into thin slices
2in a bowl, combine vinegar,hoisin,sugar,salt and fresh ginger, mix well. Add cucumbers, coat well with the mixture. Cover and place in the fridge for at least 1 hour to chill and marinate flavors.
3Toss again and add pickled ginger and crushed nuts to taste.
