Mini Shrimp Cocktail on Ritz Crackers

This is one of those classic appetizers that has been around for ages in different forms. Carol's method is easy and quick. You can easily keep all the ingredients on hand during the holidays and throw it together if you have any unexpected guests. It's a much more economical version of shrimp cocktail. The flavorful cocktail sauce goes so well with cream cheese and shrimp. Delish!
NOTE: I used frozen mini salad shrimp, but canned shrimp could easily be used too.
- 8 oz
- cream cheese, softened
- 1 c
- cocktail sauce, you may want to use more
- 4-6 oz
- mini shrimp, frozen and defrosted (canned is ok)
