This is great served over capellini pasta to make a meal for 4, or as an appetizer served with crusty bread, to sop up the white wine garlic sauce. Either way, you will love this & increase the recipe amount for a party!

Ingredients For jim's shrimp scampi

  • 1 box
    spaghetti cooked al'dente
  • 1 c
    white wine or chicken broth
  • 1 md
    lemon - juiced
  • 2 Tbsp
    minced, fresh garlic (use more or less to your taste)
  • 1 lb
    medium shrimp, peeled & deveined
  • 8 Tbsp
    (1 stick) unsalted butter, cut into chunks
  • 1/4 c
    chopped, fresh parsley (keep 2 tbs aside for garnish)
  • salt & pepper to taste
  • lemon wedges

How To Make jim's shrimp scampi

    Heat a skillet and add the wine & garlic. Let the wine reduce by half. The garlic should be soft.

    When the wine is reduced, add the shrimp and lemon juice. Stir until they are almost pink all the way through. Lower the heat.

    Start whisking in the butter a piece at a time until it is all incorporated and the sauce has emulsified. Season with salt & pepper. Stir in parsley (remember to keep 2 Tbs. aside for garnish.)

    Pour mixture over cooked pasta and mix together using tongs. Garnish with parsley. Place lemon wedges on the side.
