Peel and cut hard boiled eggs in half. Remove yolks to a bowl, set whites aside.
Smash the yolks with a fork. In a small bowl, mix mayonnaise, mustard, sugar and relish. Add to yolks. Mix well.
Using a spoon, scoop mixture into egg halves. Top with an olive half, and sprinkle with Paprika, if desired.
Cooks note: to make a nicer appearance, I carefully wipe the egg whites with a damp paper towel before filling.
