frozen tater tots
1 pkg
mexican blend shredded cheese(two cups)
1 lb
chorizo (mexican sausage, mild or medium
2 Tbsp
olive oil
1 small
onion,diced
1 clove
garlic,minced
1 pt
sour cream
1 jar(s)
salsa
4 Tbsp
cilantro, fresh,chopped
4 medium
scallions,sliced in rounds

Directions Step-By-Step

Pre-heat your oven to 425 degrees,spread the tots on a baking sheet and bake until crispy and browned.
Meanwhile,brown the onion and garlic in the oil,add the chorizo meat,no skins and brown completely.

Remove tater tots from oven,transfer to an oven proof platter or dish,spread cooked chorizo mixture over tater tots,sprinkle with Mexican cheese and return to oven for 5-10 minutes or until cheese is melted.

Garnish the nachos with the sour cream,salsa,cilantro and scallions. You can substitute beef chili or turkey chili if you prefer. You can also buy some salsa Verde which goes well with this too! Ole' Enjoy!! :)
