- avocados, halved and pitted
- 1/8 c
- olive oil, extra virgin
- yellow onion, 1/2" slices
- 4 clove
- garlic, peeled
- jalapeno, halved and seeded
- lemon, halved
- 1 1/2 tsp
- sea slat
- 1 tsp
- black pepper
- 1 bunch
- cilantro, chopped
1Brush avocados with 1 tablespoon oil.
2Grill, meat side down, on grill for 2-3 minutes.
3Drizzle with remaining olive oil and gently toss.
4Grill vegetables and lemon until onions are translucent, about 5 minutes.
5Remove flesh from avocados with spoon.
6In a bowl, mash the avocado meat with fork, leaving it relatively chunky.
7Add juice from the grilled lemon and season with salt and pepper.
8Meanwhile, roughly chop the rest of the grilled vegetables and fold into the avocado mixture.
9Add more salt to taste, if needed. Finish with cilantro.
