tammy's smoked brisket taquitos

Left over brisket makes great sandwiches - and awesome taquitos. After assembling you can freeze them for later and bake them anytime - for snack night or appetizer for your next party. I made them for an all day movie marathon on a rainy day as part of an appetizer buffet. I served a jalapeno ranch sauce but just about any sauce would be great - bbq, queso, salsa. I hope you give these a try - pulled pork would be great too!

  • left over brisket, pulled apart like pulled pork
  • corn tortillas
  • vegetable oil

How To Make tammy's smoked brisket taquitos

    In a small skillet on medium low heat - heat oil.

    Add corn tortillas one at a time, and cook until softened. Remove and place on paper towels.

    Pat tortillas with additional paper towels to remove excess oil.

    Preheat oven to 350 degrees. Add 1/8 cup filling (I just eye it) to end of tortillas. Roll tightly and put seam side down on baking sheet with edges. (If you would like, after rolling taquitos - place in freezer bags and bake when ready - the cooking time will be longer unless you let them thaw)

    Bake for 15 minutes. Turn seam side up and bake an additional 15 minutes. Enjoy with your favorite dipping sauces.
