Southwest Turkey Quesadillas

I thawed out some of the leftover turkey from Thanksgiving one day and was wondering what to do with it. We get tired of the traditional leftover dinners. Looking at what I had in the pantry and came up with this. Everyone loved it. Great way to use up that left over Thanksgiving turkey.

Ingredients

MIX IN A BOWL

1 can(s)
refried beans
1 c
salsa
1/2 c
sweet onion finley chopped
3 clove
garlic finley minced
1/2 c
chicken broth
1 tsp
cumin
1 1/8 tsp
chili powder
1 Tbsp
jalapeño peppers finley chopped

MIX IN A BOWL

1/2 tsp
cumin
1/2 tsp
chili pepper
dash(es)
salt and pepper

YOU NEED

4 large
4 flour tortillas (large burrito size)
1 pkg
(8 ounces) shredded mexican blend cheese
salsa and sour cream

Step-By-Step

1Heat griddle or skillet to 375°F.
Preheat oven 400°F.
2Lightly spray olive oil on 1 side of each tortilla. Oil side down, brown about 2 minutes, flip and spread ¼ of the bean salsa mix on half. Sprinkle ¼ seasoned turkey and ¼ of the cheese.
Fold over and carefully flip, cook until cheese is melted and tortillas are crisp, about 2 to 3 minutes per side.
3Place in preheated oven on baking sheet to keep worm while making remaining quesadillas.
4Cut each quesadilla into wedges. Serve with salsa and sour cream.
