~ Simply Glazed Kielbasa Over Rice ~

My son especially loves this quick and easy meal.

The Kielbasa can be served over rice, as an appetizer or as a side.

Ingredients

1 lb
kielbasa - sliced
1 c
apricot preserves
1/4 tsp
each - pepper, ground ginger, garlic powder
1 1/2 Tbsp
lemon juice
2 tsp
dijon mustard
rice
prepared

Step-By-Step

1In a medium sized skillet over medium heat, whisk together all ingredients but the rice and kielbasa. Once the preserves have melted and all has come to a simmer. Add the sliced kielbasa and turn the heat to low. Leave simmer for 45 minutes to an hour. Stirring occasionally.
2Plate rice and spoon Kielbasa and sauce over it.


Yum! One of those easy meals that gets better the longer it cooks.
