Heat oil on medium heat and saute your onions, parsley, salt and pepper for about five minutes. Add garlic and saute for another minute or so being careful not to burn the garlic. Remove from heat and let cool.
Using your hands mix ground chicken with onion mixture and place in fridge for about 20 minutes. Preheat oven to 400 degrees.
Roll into 1 inch meatballs and place on greased cookie sheet. Bake in preheated oven for 15-20 minutes or until meatballs are golden brown.
While meatballs are baking make your wing sauce. Stirring frequently, heat butter, hot sauce and black pepper in saucepan over medium heat until it reaches a soft boil. Remove from heat. Toss baked meatballs with hot sauce in bowl or keep warm in a crockpot. Garnish with chopped tops of green onion.
Serve with ranch or blue cheese dressing and if desired celery and carrots.
