Ingredients

1 Tbsp
vegetable oil
1 lb
johnsonville spicy italian sausage, bulk
1/2
onion, chopped
4
garlic cloves, chopped
1 can(s)
rotel
1 tsp
cilantro stems, chopped
2 lb
velveeta, cut in slices
1 Tbsp
cumin
1 tsp
cayenne pepper-to taste
corn tortillas, cut in triangles then deep fried

Directions Step-By-Step

Add oil to skillet, fry sausage until almost done. Toss in onion and garlic. Fry until onions are translucent. Add Rotel and cilantro stems to skillet. Cook for about a minute or so. Add Velveeta, cumin and cayenne pepper. Simmer for 8-10 minutes until cheese has melted and bubbly. If too thick, add a little milk. Serve with seasoned fried tortilla chips. Enjoy!
