Do you just love Asiago? These crisps are all cheese with a small amount of flour to help them hold together. Then lightly fried to crispy deliciousness. With just 2 ingredients and 2 steps to follow, it could not be any easier. Asiago is an Italian cheese that can assume different tastes and textures according to aging. From smooth for the fresh to crumbly texture for the aged. The aged flavor is reminiscent of a sharp cheddar and Parmesan. Asiago is very similar to Parmesan and Romano but Asiago tastes sweeter. Parmesan will be sharper and Romano much sharper.

Ingredients For asiago cheese crisps

  • 2 c
    (about 1/2 pound) asiago cheese, grated
  • 1 Tbsp
    flour
  • extra-virgin olive oil for pan frying

How To Make asiago cheese crisps

    Combine cheese with flour in a medium bowl; mix until thoroughly combined.

    Lightly grease a large skillet (cast iron is preferable) with olive oil, then place over medium-low heat. Spoon 2 tbsp. of cheese into heated skillet to make a 2" to 3" round. Allow cheese to melt and edges to turn a golden brown. Cook, without touching, for about 3 minutes, then turn with a spatula. (when ready to turn, the cheese round should come away easily from the from the pan). Continue cooking for 2 minutes.

    Drain well on paper towels. Repeat with remaining cheese. SERVING NOTE: Serve @ room temperature.

    Directions to bake in oven: 350 degrees on silicone baking mat or greased parchment paper. Flatten and leave @ least 2 inches between them. Bake 5-6 minutes until edges are just starting to brown. Watch carefully! Crisps will become bitter if over baked.
