Moroccan carrot salads are one of my favorite summery things. Posting so that I'll have it on hand.

Ingredients For spicy moroccan carrot salad

  • 1 lb
    carrots, grated
  • 1/2 c
    pine nuts (preferably toated) or chopped dates
  • 4 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    honey, splenda or sugar
  • 3 Tbsp
    fresh lemon juice
  • 3/4 tsp
    freshly grated ginger
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    red chili powder or to taste
  • generous pinch of salt

How To Make spicy moroccan carrot salad

    Make The Dressing: By combining all the dressing ingredients in a jar or a glass and mix well. Let the dressing sit at room temperature while you prepare the carrots.

    Wash and grate the carrots. You can use ready-grated carrots if you are short on time or energy, but freshly grated carrots will be juicier. Place the grated carrots and pine nute or chopped dates in a bowl.

    Add the dressing and mix well.

    Refrigerate and serve chilled.
