Who doesn't like breakfast for dinner from time to time. I know that we do. This is a happy medium that is good at breakfast, brunch, lunch or dinner. I like to pre-cook the broccoli a bit, just enough to remove the hard crunch of the stem. The recipe will multiply easily.

Ingredients For breakfast for dinner omelet

  • cooking spray
  • 1 c
    chopped broccoli
  • 2 lg
    eggs, beaten
  • 2 Tbsp
    feta cheese, crumbled
  • 1/4 tsp
    dried dill, basil or oregano
  • rye bread toast, optional

How To Make breakfast for dinner omelet

    Heat a nonstick skillet over medium heat. Coat pan with cooking spray.

    Add broccoli, and cook 3 minutes.

    Combine egg, feta, and herb of choice in a small bowl. Add egg mixture to pan.

    Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.
