breakfast for dinner omelet
Who doesn't like breakfast for dinner from time to time. I know that we do. This is a happy medium that is good at breakfast, brunch, lunch or dinner. I like to pre-cook the broccoli a bit, just enough to remove the hard crunch of the stem. The recipe will multiply easily.

1 cchopped broccoli

2 lgeggs, beaten

2 Tbspfeta cheese, crumbled

1/4 tspdried dill, basil or oregano

rye bread toast, optional
How To Make breakfast for dinner omelet

1Heat a nonstick skillet over medium heat. Coat pan with cooking spray.

2Add broccoli, and cook 3 minutes.

3Combine egg, feta, and herb of choice in a small bowl. Add egg mixture to pan.

4Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.
