Tomato Salad

Ingredients
| 4 | firm red tomatoes |
| 3/4 c | cut, canned corn |
| 1/3 c | diced cucumbers, finely diced |
| 1/2 c | chopped ham (like ham salad texture) |
| 2 tsp | chopped chives |
| 1/4 tsp | black pepper |
| 1/2 c | mayonnaise |
| 1 1/2 tsp | horseradish, prepared |
| 4 | romaine lettuce leaves, washed & patted dry |

This is an adaptable recipe. You could add chopped eggs, peas, or bacon or even change the ham to chicken or tuna! Substantial enough to be lunch, alone!

Directions
Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.
Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)
Turn upside down to drain out juice. Mix rest of ingredients in a bowl.
Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4
