Ingredients

4 firm red tomatoes
3/4 c cut, canned corn
1/3 c diced cucumbers, finely diced
1/2 c chopped ham (like ham salad texture)
2 tsp chopped chives
1/4 tsp black pepper
1/2 c mayonnaise
1 1/2 tsp horseradish, prepared
4 romaine lettuce leaves, washed & patted dry

Jan's Notes:
This is an adaptable recipe. You could add chopped eggs, peas, or bacon or even change the ham to chicken or tuna! Substantial enough to be lunch, alone!

Directions

Bring a pot of water to boil. Drop in tomatoes. Leave 30 seconds then immerse in cold water to peel skins off.

Trim out the tomato core and using a spoon or melon scoop, scoop out interior. (I freeze it for later to add to soup.)

Turn upside down to drain out juice. Mix rest of ingredients in a bowl.

Put lettuce leaf into your salad bowl or dish or plate. Put tomato on top. Fill with salad. Serves 4

cut,canned corn, do you mean you can use canned corn or cut corn from cooked cobs also?

It wouldn't matter. I used canned corn but if you cut fresh off the cob and cooked it down and drained it, it would be fine, as well.

In the directions it says drop in tomatoes, leave for 30 minutes. Is that right or should it say seconds?
