My kids love these muffins.

Blue Ribbon Recipe

A fluffy oat muffin that's full of cinnamon flavor. When you hear snickerdoodle you think COOKIE, but this recipe turns that notion on its ear. The muffin is simple to make, tender and moist, with a little bit of chewiness from the oats. Sprinkling cinnamon sugar on top gives it the snickerdoodle feel.

Ingredients For snickerdoodle muffins

  • 1 1/2 c
    self-rising flour
  • 1 c
    oats
  • 1/2 c
    plus 1/3 cup sugar, divided
  • 1
    egg
  • 4 Tbsp
    butter
  • 1 tsp
    vanilla
  • 1 c
    milk
  • 1 tsp
    cinnamon

How To Make snickerdoodle muffins

  • Dry ingredients in a bowl.

    Preheat the oven to 400 degrees F. In a large bowl, mix together the flour, oats, and 1/2 cup sugar.
  • Wet ingredients in a bowl.

    In a separate bowl, mix together the egg, butter, vanilla, and milk.
  • Wet and dry ingredients combined.

    Add the wet mixture to the dry mixture; mix well.
  • Batter poured into muffin tins.

    Fill the muffin cups 2/3 of the way full. Bake for 12-14 minutes.
  • Sugar and cinnamon combined in a bowl.

    While the muffins bake, mix together the remaining 1/3 cup sugar and the cinnamon in a small bowl.
  • Brushing butter onto the baked muffin.

    Once the muffins are out, top with the cinnamon/sugar mixture. If you prefer a lot of topping, brush a little melted butter on top of the muffin to get more of the mixture to stick.
  • Sprinkling muffin with cinnamon sugar.
