Ingredients
| 1 md | loaf french bread cut into 1 inch slices |
| 4 md | tomatoes, chopped |
| 8 oz | mozzarella cheese, grated |
| 1/4 c | grated parmesan cheese |
| 1/2 sm | onion, chopped |
| 1/2 sm | sweet red (bell) pepper, chopped |
| 1 bunch | fresh basil, chopped |
| 2 clove | chopped garlic |
| 3 Tbsp | balsamic vinegar |
| 3 Tbsp | extra virgin olive oil |
| 1 tsp | coarse sea salt (to taste) |
| 1 tsp | coarse ground black pepper (to taste) |
| 1 tsp | fresh oregano (or 2 tsp. dried) |

The kids love this one. Quick and easy, warm and cheesy, this one is also a hit with guests. Add red pepper flakes for an extra kick.

This simple dish has great flavor... largely due to the fresh tomatoes and prominent basil! I used 3 large tomatoes when I prepared the dish, but feel free to adjust to your liking.[Read more about this recipe in Janet's Notebook!]
Directions
Mix all ingredients except cheese and bread in a mixing bowl. Set aside and let flavors blend.
Toast bread to light, golden brown and remove from oven.
Mix mozzarella and parmesan cheeses.
Spoon tomato mixture onto bread. Drizzle with juice (tomato, oil, vinegar) from mixing bowl. Top with cheese. Continue until all ingredients are gone.
Place in oven at 400 degrees for 20 minutes or until cheese is melted and golden. Remove and serve!

I just had my first taste of Bruschetta this summer....I Can't believe I've never had it before, It's heavenly....I will definitely try your recipe!

Had the bruschetta tonight and it was wonderful! Since there are only two of us, cut way down on the proportions, but stuck to your ingredients and instructions. Will be making this again.
