kathleen's Notes:
All these berries, and not enough summer. I am always looking for recipes that are unique, but yummy to the last drop. So I found this unbelievable recipe. Not only is it superb in its taste, and appearance, it is one that most people would never imagine with the balsamic vinegar would capture our taste buds such as this concoction. Enjoy, and I know you can't stop eating this outrageously decadent sauce/jam, but when you do you will surely be ready to go out and get more of those berries to turn them into this unforgettable delectable delight. Enjoy..Blessings.
Oh yes all the credits for this unbelievable jam/sauce recipe is from: SavorySweetlife.com.
What a prize, believe me..You will not want to stop eating this velvety, satin deep red delicacy.

Directions

1
Chop strawberries.
2
In a medium sauce pan combine strawberries, balsamic vinegar, and sugar.
3
Combine all ingredients in a medium sauce pan, and cook on medium-high heat for about 20 min. Stirring occasionally. When sauce is the consistency of honey. Remove from heat and allow to cool. Voila it is jam.
4
If you want sauce just cook the strawberries for 10 min., until consistency is of maple syrup on the back of your spoon, remove from heat and allow to cool.

Thanks for the tip on the savory sweet life site, wow she has some great recipes, This jam/sauce sounds great! can you taste the balsamic vinegar? I'm going to have jam coming out of my ears but am going to give this a try after the weekend :-) wonder if it would hurt to freeze it? I did freeze some of the apricot jam.

Julian,
Yes this is one you will want to make often. Thanks for the encouragement. I make jam because I give it away, and enjoy some outrageous gr8 bread, and a cup of organic coffee, and cream, and oops....DUNK IT is what I do, while watching my bird paradise, theater. Blessings.

Gaillee, Thanks for the high five. Yes she does have some gr8 recipes...I love visiting all of these sites. I put some honey to cut the taste, but when cooking it you see the vinegar taste evaporating, and creating a gr8 sauce you won't want to stop licking the spoon...My friends won't let me freeze them...I will have to make some in secret...Blessings.

WOW!!!!!!! I just made a batch and it is so good, I wasn't sure how long to keep it cooking (as it was simmering pretty good) to get to the honey stage for jam, plus I doubled the recipe and my berries were fresh but I had froze then a month ago so that added more juice. It didn't matter this time because it got to a "sauce stage" and I took about 1/4 cup out and tried it over the whipped cream pound cake (from this site) and that was all it took!!!! Will make the jam stage next week :-) Thanks so much for sharing this

I just made this using splenda in place of the sugar and it is great. Best jam I ever ate, and so easy.

I am diabetic and this is a wonderful way to sweeten the berries with less sugar and then after refigerating for a couple of hours, it is heavenly over angel food cake. Yummy!
