1 c butter, softened
1/2 c powedered sugar
1 1/2 tsp vanilla extract
2 c all purpose flour
1/2 tsp salt
1 c old fashioned rolled oats (quaker oatmeal, not instant)

This version of the wonderfully classic wedding cookie is nut-free... so it's perfect for those with nut allergies. Enjoy!

 

Directions

In a large bowl beat butter until creamy. Gradually beat in powdered sugar, then salt, vanilla, flour, and salt. When blended and smooth stir in oats. shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. you can also flatten by pressing with fingers. bake 18-22 minutes or until golden brown. while still warm roll in powdered sugar. cool on wire rack. makes 2 1/2 to 3 dozen cookies.

* PRE-HEAT OVEN TO 350 degrees

I substituted the butter for Brummel & Brown yogurt spread for a perfect lactose free delight. Thank you for this yummy easy recipe.

I make these every yrear at Christmas. When my kids were young they would help roll the balls and called them "snowball cookies". Though we use finely chopped walnuts in place of the oats. One of my favorites.

I make these during Christmas and everyone enjoys them so much. I also use chopped nuts instead of oats. Thanks for the recipe.

This was one of the cookies my grandmother would make for Christmas. She also used nuts in place of the oats. We knew just where she kept the numerous tins of Christmas cookies and that was the first place we headed to when we visited at Christmas time! :)

Walter Peyton's mother used to make my paternal grandmother caramel icing for home-make cakes & sugar cookies, home made also. I have the recipes but had a brain aneurysm. Can't cook again until I am released from doctors. Plan to do so in Texas,

Can't go a Christmas season without snowball cookies. Ialso use nuts instead of oats. I use chopped pecans.

Can these be made without the oatmeal/nuts. My husband doesn't tolerate either of them very well.

Yes. I have never used oats, but I do use chopped pecans. I'm sure they would work without either.

Let them cool just a little before rolling them so the powdered sugar doesn't glob up. I store them in a loose lid container also to prevent this.
