Ingredients

1 c sliced almonds
4 Tbsp sugar
3 bunch romaine lettuce head
2 green onions
1 c celery, sliced
1 can(s) mandarin oranges, drained
DRESSING
1/2 tsp salt
dash pepper
1/4 c vegetable oil
2 Tbsp vinegar
2 Tbsp sugar
1 Tbsp parsley, chopped

This is one of my favorite salads. It is refreshingly different than your typical salad.

A sweet departure, indeed! This is a great addition to any summer meal. The recipe doesn't make a whole lot of dressing, so I would recommend at least doubling it... it's that good.

Directions

Mix all dressing ingredients together and chill in refrigerator. In small pan over medium heat cook almonds and sugar, stirring constantly, until almonds are coated and sugar is dissolved. Watch carefully as they burn easily! The almonds should be just a little brown.

Mix lettuce, celery and onion. Just before serving, add oranges and almonds. Toss with dressing.

Hi Cyndi, I notice celery is mentioned in step 2, but not in the ingredients. How much celery do you use?

Your recipe calls for 4 Tbsp of Sugar. Can Splenda be used instead?

I actually use rice wine vinegar. It has a nice light flavor but you can use a white vinegar or even apple cider vinegar.
