1-1/2 c flour
1/4 c sugar
2-1/2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1 can(s) (6 oz) can frozen lemonade concentrate, thawed
1/4 c milk
1/3 c vegetable oil
1/2 c walnuts, chopped

These are one of my daughter's favorites, not only to make but eat as a little girl. Now that she is grown and has a family of her own, she loves to make these muffins.

A sweetly tart pick-me-up perfect for brunch! Hmmm... I wonder how these would be if made with PINK lemonade!

 

Directions

Preheat oven to 375. Mix dry ingredients.

In another bowl, mix 1/2 cup lemonade, egg, milk and oil. Add the dry ingredients. Stir in nuts.

Prepare muffin pan with vegetable spray or cupcake liners. Fill with batter about 2/3 full. Bake for 15-20 minutes.

While hot, brush with remaining lemonade and sprinkle with granulated or powdered sugar.

I'm betting these would work for ANY flavor of frozen concentrate juice. I think I have orange in the freezer, but no lemon. I'll have to test, and let everyone know. ANY citrus baked good is YUMMY

Can you substitute this with strawberries? I have some frozen strawberry pulp in the freezer.

I made these this morning and I thought they tasted very "mediciney." I don't know how else to describe it. Husband hated them.
