Gay's Story

These are one of my daughter's favorites, not only to make but eat as a little girl. Now that she is grown and has a family of her own, she loves to make these muffins.

Blue Ribbon Recipe

Notes from the Test Kitchen:
A sweetly tart pick-me-up perfect for brunch! Hmmm... I wonder how these would be if made with PINK lemonade!

Ingredients

1-1/2 c
flour
1/4 c
sugar
2-1/2 tsp
baking powder
1/2 tsp
salt
1
egg, beaten
1 can(s)
(6 oz) can frozen lemonade concentrate, thawed
1/4 c
milk
1/3 c
vegetable oil
1/2 c
walnuts, chopped

Directions Step-By-Step

Preheat oven to 375. Mix dry ingredients.

In another bowl, mix 1/2 cup lemonade, egg, milk and oil. Add the dry ingredients. Stir in nuts.

Prepare muffin pan with vegetable spray or cupcake liners. Fill with batter about 2/3 full. Bake for 15-20 minutes.

While hot, brush with remaining lemonade and sprinkle with granulated or powdered sugar.

Tried these and I don't know if I did something wrong. Followed recipe but they were so dry we tossed them.

I would love to make the muffins but would like to add fruit to it how much friut? 1/2 cup? Or will it make it too runny? (Blueberry)

I left out the walnuts. Made it into 24 mini muffins and cooked for 10 mins. Turned out great!
