6 chicken breasts, boneless and skinless
2 c mozzarella cheese
3 c zucchini, sliced
6 tomatoes, sliced
fresh basil
salt and pepper to taste

Lynn's Notes:
Remember "hobo packs" from your growing up years? This is the same idea, only with chicken instead of hamburger meat, and the basil and olive oil give these packs a distinctive Italian flair!

Directions

Cut six pieces of foil large enough for one chicken breast and vegetables. Brush foil with olive oil. Set aside.

Divide vegetables evenly between pieces of foil and sprinkle with salt and pepper. Chop basil and scatter on top of vegetables.

With sharp knife cut the chicken breast at regular intervals. Place a slice of mozzarella cheese in each cut of chicken.

Wrap the foil to close the chicken and vegetables tucking in the ends. Place on a cookie sheet and bake in a 400 oven for 30 minutes.

To serve unwrap package and accompany with wild rice.

I absolutely LOVED this recipe. I'm always looking for different things to do w/chicken. This was tasty & healthy, and that's a great combo! Absolutely want to try it w/mushrooms & onions! mmmmmmmm.......

Lynn, I make chicken packages about once a week. Next time I'm going to try your Italian Chicken Packages. I'll have to make more so my wife can take some for her lunch. Great recipe, keep on posting.

Lynn, I made this on our trip to Santa Barbara beach on Xmas eve & it was a hit! I added half a potato at the bottom & sprinkled some slices of green onions w/ the fresh basil...I didn't have zuchinni but added half a jalopeno w/ the tomato & more fresh basil, then 2 slices of Swiss cheese on top of the chicken since I didn't have Mozarella cheese...when we arrived at the beach, the cheese mixed w/ the chicken sauce & formed a gravy for the potatoes! It was delicious warm lunch on a perfect beach outing! And for the rice, I made some shrimp sushi on the side & together it was a bomb! It was an easy clean-up too! Thanks for sharing!

we did this with either beef or chicken as kids in girl scouts... we called it girl scout stew... and made dessert the same way with chocolate chips, marshmallows, candied cherries and bananas! thanks for reminding me of the basics again... was just cruising about looking for a different meal for me and the hubs today in chicken! this is it!

I think I'm going to use this method tonight but with Chicken Cordon Bleu-ish ingredients. I'm sure the kids will think it's fun to have their own little pkt.:) Thanks for the idea!
