Bea's StoryButtermilk prices have soared lately. Try this...it does work. I've done this many times myself.
lemon juice or white vinegar
enough milk to equal 1 cup or whatever the amount is needed for your recipe

1Stir vigorously then let stand 5 minutes. I have also used apple cider vinegar with great success. Another member has used lime juice with success as well.

Thanks for posting this as I have come across some recipes that called for buttermilk and I never keep that on hand.
