Ingredients

3/4 c margarine or butter
3 c sugar
1/2 - 3/4 c evaporated milk
1/3 c bailey's irish cream
1 Tbsp instant coffee crystals
7 oz jar marshmallow cream
1 pkg vanilla morsels or butterscotch chips
1 tsp vanilla extract

Very smooth and silky fudge. I like to make this recipe and my other Bailey's Irish Cream fudge and give as gifts because they are both wonderful flavors. All my friends love love love this fudge!

Irish coffee... only more wonderfully sinful! The fudge turned out remarkably smooth and creamy - We can't wait to make it again!

 

Directions

In a small bowl combine Bailey's and coffee crystals. Microwave on high for 10 seconds. or until melted and dissolved

In a medium saucepan, over medium heat, melt butter,evaporated milk, sugar and marshmallow cream. Slowly add the Bailey's coffee mixture; stir well. Boil for 5 mins.

Remove from heat and stir in chips and vanilla extract. Stir for approx. 3-4 mins. until smooth. Pour into a foil lined 8x8" pan. Chill to set.

Aloha Heather, it's 10:55 in the evening here and I just poured the fudge into a 9 x 9 square pan. It smells heavenly.
I am assuming that the evaporated milk goes into the saucepan with the butter, sugar and the marshmallow cream, and I correct? I hope so, because that is what I did. :) XOXOX Jo

Aloha! It sure does. I'll have to correct that. By the way, are you located on the big island or one of the other islands? My husband and I honeymooned on Oahu 16 years ago. What a gorgeous place and I'll never forget what a beautiful friendly place it was. I'd love to go back someday. Have a good night!

Aloha Heather, Good Morning, I woke up this morning and in a nick of time, I stopped my dad and brothers from cutting the fudge!!! I fell asleep last night and it was left on the counter to cool but never made it to the refrigerator, it's a bit soft and I want to firm it up. I will let you know how it turned out in a few hours.
I live on the island of Oahu, where it is always busy, busy, busy! The neighbor islands are a little slower living and I am sure very good for your blood pressure, LOL! And also the smaller towns are a sleepy very laid back kinda communities.
