Ingredients For vegetable gumbo

3 Slices bacon (diced)

1/4 C Finely chopped yellow onion

1/4 C Finely chopped celery

1 Lb Can tomatoes (do not drain)

10 oz Package frozen whole baby okra (thaw only to separate pods, then slice into 1” rounds)

10 oz Package frozen whole kernel corn (do not thaw)

1 tsp Salt
-
1/8 tsp Pepper

Pinch Powered saffron
-
Pinch file’ powder

2 C Hot cooked rice
How To Make vegetable gumbo

1Fry bacon in a large skillet over moderate heat 2 – 3 minutes; add onion and celery and sauté 8 – 10 minutes until golden. Add tomatoes and okra, cover and boil gently 3 – 4 minutes. Add corn, salt, pepper and saffron; recover and boil 3 - 4 minutes longer until okra is tender. Stir in file’ powder, ladle over rice and serve.
