This is a great summer soup and your guests and family will love the creamy and rich taste of this delicious soup. Great for club- and if you an abundance of these beets great for a pot luck or church gathering.

Ingredients For yellow beet and pear soup

  • 4 md
    yellow beets,washed and peeled,sliced
  • 3 Tbsp
    vegetable or canola oil
  • 1 md
    onion, diced
  • 1 Tbsp
    minced garlic
  • 4
    ripe pears,peeled and diced
  • 1 c
    vegetable or chicken bouillon
  • 1/2 c
    white grape juice or dry white wine
  • 2 Tbsp
    honey
  • 1 c
    hazelnut coffee creamer
  • s and p
    to taste
  • 1/2 c
    walnut pieces for garnish
  • orange peel for garnish

How To Make yellow beet and pear soup

    Heat the oil in a medium kettle and add the onion; sauté until tender. Wash and peel beets and slice into the kettle. Add the bouillon and garlic. Cook until beets are tender. Add the pears and cook until both beets and pears are soft.

    Remove kettle from heat. Pour or scoop mixture into blender or food processor and puree until smooth. Add the white grape juice or wine, honey and creamer; blend until smooth.

    Pour into individual soup bowls and garnish with orange peel and/or walnuts. Enjoy!
