winter warmer cabbage + veg soup

This is a hearty filling soup for them cold wintry days. I also would do this soup as a starter when doing Christmas dinner , all the family loves it. So from my table to yours hope you like and enjoy.....:)

Ingredients For winter warmer cabbage + veg soup

  • 1/2
    fill a heavy bottom pot
  • 1 c
    mixed soup barely(pearl barley,yellow split peas,green split peas,marrowfat peas)comes already mixed in a bag
  • 1/2 c
    red split lentils
  • 2 qt
    white head of cabbage
  • 2
    carrots (diced)
  • 2
    leeks(sliced)
  • 1/2
    turnip(peeled +diced)
  • 2
    parsnips(diced)
  • 4 stick
    celery(sliced)
  • 2 clove
    garlic(diced)
  • 1 tsp
    salt +crack black pepper
  • 1
    vegetable stock cube

How To Make winter warmer cabbage + veg soup

    Wash, peel and prepare all the vegetables, for cabbage take off the outer layer of cabbage leaves, half and quarter and remove the hard centre bit. Use 2 of the quarters and slice up in strands , cut and slice other half and put into a food bag then into your freezer for again.

    Fill a heavy bottom pot half way up or little over. Add the soup barely, lentils and veg stock cube, and give a good stir. Then add all of the prepared vegetables and salt + pepper.

    Bring slowly to the boil and let simmer gently to draw out all the favours and nutrients. Simmer for 30 minutes, stirring occasionally . Then take off the heat, liquidise with a hand blender in the pot. The soup will have a thick concisely.

    Serve with homemade brown soda bread, sit back and enjoy .Think to yourself AH!! this winter isn't so bad.....:)
