An old recipe thats a family favorite. This potato soup is very light.

Ingredients For potato soup

  • 6-8
    medium or large potatos
  • 4 slice
    bacon
  • 6
    green onions or scallions
  • 1/2 c
    butter or margerine

How To Make potato soup

    Peel and dice potatoes in to medium/small chunks. set these aside after they have been rinsed.

    Turn the burner on medium heat and set out a large pot. Cut up the bacon slices into small pieces and throw into the heated pot. and cook until done (not overly done or crispy) Turn on low heat. Now add the butter in with the bacon. While that is cooking on low, finely chop the green onions, then add them to the pot to cook for a few minutes so the flavors blend.

    Now add your diced potatoes to the pot and add about 4 cups of water. ( I never measure with this) Just be sure the potatoes are well covered. Sprinkle with a bit of salt and cook on medium heat until potatoes are tender. This soup is best served with sweet corn muffins.
