Ingredients For pesto soup

6 cwater
-
1/2 tspsalt

1 cpotato, peeled and diced

1 mdonion, diced
-
2 cfrozen veggies (peas, corn, carrots, green beans)

1/2 cuncooked pasta or rice

1 canred kidney beans
-
2 tspdry parsley
-
3 tspbasil
-
1/4 colive oil
-
1/4 cgrated parmesan cheese

3 Tbsptomato paste
-
1 clovegarlic, minced
-
1/8 tspsalt
How To Make pesto soup

1Combine all ingredients up to, and including kidney beans. Bring to boil, then simmer low 45 minutes. Add pesto ingredients (parsley to the end of list). Stir. Simmer low for 20 minutes, stirring occasionally.

2Serve with fresh grated Parmesan and a French baguette.
