My husband's mother makes the BEST potato soup! Every time she makes it for us, I eat it until I hurt!

Ingredients For mom's potato soup

  • 2-1/2 lb
    white potatoes
  • 1/2 stick
    butter
  • 1/2
    medium onion, chopped
  • 3
    stalks of green onions
  • 1/2 tsp
    black pepper
  • 2 c
    chicken broth
  • 1-1/2 to 2 c
    half & half
  • 1/2 tsp
    garlic, minced
  • bacon bits
  • cheddar cheese, grated
  • salt, to taste

How To Make mom's potato soup

  • 1
    Peel, cube and boil potatoes. Drain potatoes and return to pot.
  • 2
    Saute onion and garlic in butter until soft. Add onions and garlic to potatoes.

    Bring to boil over medium high heat. Add chicken broth. Mash/blend until slightly lumpy.

    Gradually add half & half while on low heat. Stir often for about 30 minutes. Add salt to taste.

    Garnish with green onions, cheese, pepper and bacon bits.
