Ingredients For minestrone alla milanese ~ slow cooker

  • 2 can
    (14 1/2 oz) each of reduced-sodium beef broths
  • 1 can
    (14 1/2 oz) diced tomatoes, undrained
  • 1 c
    diced potato
  • 1 c
    coarsely chopped green cabbage
  • 1 c
    coarsely chopped carrots
  • 1 c
    sliced zucchini
  • 1/4 c
    chopped onion
  • 3/4 c
    sliced fresh green beans
  • 1/4 c
    coarsely chopped celery
  • 1/4 c
    water
  • 2 Tbsp
    olive oil
  • 1 clove
    garlic, minced
  • 1/2 tsp
    dried basil leaves
  • 1/4 tsp
    dried rosemary
  • 1
    bay leaf
  • 1 can
    (15 1/2 oz) cannelini beans, rinsed and drained
  • grated parmesan cheese (optional)

How To Make minestrone alla milanese ~ slow cooker

  • 1
    Combine all ingredients except cannelini beans and cheese in slow cooker, mix well.

    Cover and cook on LOW 5-6 hours Add cannelini beans. Cover and cook on LOW 1 hour or until vegetables are crisp tender. Remove and discard bay leaf. Garnish with cheese, if desired.
